SPINCon Shopping List

Here are the items you'll want to buy ahead of time, if you want to play along at home. NOT required, but real cookies are better than virtual ones. Just sayin'.

Cookie Baking 

NOTE: You'll have time to make two different kinds.
1) SPECULAAS
SPIN Baker: Angie VanWingerden


Speculaas Spice Mix
5 Tbsp cinnamon
1 tsp ground nutmeg
1 tsp ground cloves
1/2 tsp ground aniseed
1/2 tsp white pepper
1/2 tsp ground coriander seed
1/2 tsp ground ginger
1/2 tsp ground cardamom
1/2 tsp ground mace
Store in an airtight container, will make 6 tbsp total

Speculaas Cookies

1 1/2 cups (195 grams) all-purpose flour
1/2 cup (50 grams) almond flour
1 teaspoon (4 grams) baking powder
1/4 teaspoon (1 gram) salt
2 teaspoon of Speculaas spice mix (i suggest to taste your batter and add more to your liking)
1/2 teaspoon lemon zest (outer yellow skin of lemon)
1/2 cup (113 grams) unsalted butter, at room temperature
3/4 cup (160 grams) firmly packed light brown sugar
1 large egg (55 grams), at room temperature
2) HOMEMADE TOFFEE

1 Tbsp. Corn Syrup
1 c. Sugar
 c. Toasted Chopped Almonds
6 oz. Baker’s® Semi-Sweet Chocolate

McMenamy Brown Sugar Cookies (Circa 1870)

Dark Brown Sugar - 1/2 cup
Flour - 2.5 cups
Cinnamon & Ginger if desired

1 Cup + 2 TBSP Margarine
3 &1/4 Cups Powdered Sugar
2 TBSP Milk
1 ½ Cup Flour
¾ Cup Cornstarch
3 TBSP Lemon Juice
Small amount (1-2 drops) Yellow Food Coloring

Orange - 1
Cinnamon - a few sticks
Fresh rosemary - a few sprigs
1 quart sauce pan (or larger), water, and a stove
Cutting board and knife

Celery — 4 Stalks
Orange (peeled) — 1 large
Spinach — 5 handfuls
Lemon (with rind)  — ½ fruit
Ginger — ½ thumb tip
A blender or juicer

Holiday Cocktails & Mocktails

NOTE: Each recipe makes 2 servings. You'll learn to make all three.
​ALSO NOTE: Most of these alcohols come in airline-size bottles. Also, you can play along and make Mocktail versions, too.
"Planned in Advance 
Peppermint Hot Chocolate"
  • .25 oz Peppermint Schnappes
  • .5 oz Godiva Chocolate Liqueur
  • 1 cup hot chocolate (made in advance: please use the good stuff with real milk or your favorite milk substitute, not that stuff you add water to!)
  • Whipped cream (Canned for shooting into your mouth is best, though if you must make your own...
  • Cinnamon and or nutmeg if you'd like. I like.​
  • Crushed peppermint candy 
  • 2 Candy canes

(Tools: Mug. Whisk)
"Chocolate and Orange Make your Head SPIN"
  • 1/4 cup powdered sugar
  • zest of 1/2 orange (or clementine or tangerine)
  • 2 shots of vodka
  • 2 shots of creme de cacao
  • 1.5 shots of orange syrup (see recipe below- can make a week ahead and refrigerate)**
  • 1 shot orange juice
  • ice
 
(Tools: coupe glass (it's a thing - use the Googles to look it up), cocktail shaker, jigger or shotglass)
 
**Make ahead of time!
Orange simple syrup
Combine powdered sugar with 1/2 cup water and the orange zest in a saucepan. Bring to a boil. Cool and strain. Refrigerate for at least a day, preferably longer.
"Cranberry to get you Sauced"
  • Juice and finely grated zest of 1 orange
  • 1/2 tsp honey
  • 1/2 tbsp coarse sea salt
  • 1/2 tbsp granulated sugar
  • 2 shots tequila
  • juice of 1/2 lime
  • 2 shots cranberry juice
  • 1 shot triple sec
  • ice
(Tools: thin paintbrush to brush honey on the glass (or your finger if you don't wanna impress anyone), martini glass, zester, jigger or shotglass, cocktail shaker)
